Things a fantasy town needs?

One feature I'm trying to implement for my RPG is living towns, where every NPC has a name, an occupation, a schedule and never just stands idly by the gates to inform strangers that this is the town of Peasantville.
Therefore, I need to know all the things a fantasy town needs to be somewhat realistic. People, places, buildings, and such.

Well that really depends on the town you know? Not every town got the exact same things as they are mostly producing their own vares and make their own trade items to sell.
But just a quick list of more-usual stuff:
People:
People to enforce the laws.
People to be in charge of the town.
People to provide food from cattle or farms.
People to provide job such as carpenters, blacksmiths, tailors.
People who got stores such as fletchers, armourers, chemists, innkeepers.
Children who plays around or go to school.
Pets and other tame animals that roam the place to add a more "free" feeling to it.
People who takes care of the children and animals.
Drunks and crippled.
Buildings:
A town hall for the leader.
An office for the guards/enforcers.
Windmills, watermills and pumps.
Farms and barns as well as silos and storehouses if possibly.
Trade-buildings where the working people work and/or live.
Stores/shops/bazaars/markets where you can buy/sell stuff.
Inns, motels, hotells.
School, university, dojo, arena, colosseums ect.
Houses for about at least half of the population.
That's all I can think of. Pretty much basic but I'm not sure how detailed you want this.

People:
Criminals
Priests/religeous people
Scientists / mechanics/researchers
postmen
Soldiers
Buildings:
Jails
Churges/temples
Research buildings
Post Offices / Mail boxes
Fortresses/soldier training grounds

Hell Yeah! Just recovered all my old rm2k/3 games from my 10 year old, broken laptop hard drive that had been formatted and had a new OS installed on it. Oh, and I did all of this from my phone. WIN

You should add something like not-so-random quests that you can do for the townsfolk. Like run down to the market and buy someones groceries for a reward, for example.
