I miss being able to change my title.

You can. Go to the Profile tab at the top of the forum and look for "Forum Profile Information" on the left. The field is in there, although HTML is disallowed.

I can't find it... Personal text is the text under the avatar, I get that much, but I can't seem to change the title under my username... which looks ridiculous now considering colored named are gone.

Fixed it, apparently you need to have permission to change your title, which I have just granted to regular members. Sorry.

I'll be working on the front page username-thread-creator thing in a few days when I get back to my normal computer, as well as colored names.
