HK Style Fried Rice:
One Large Onion (chopped into tiny bits)
A few cloves of Garlic (chopped into tiny bits)
2-3 tablespoons of oil
A medium sized bowl of rice (newly cooked so it'll be moist)
Shrimps, Prawns (what's the diff?.. ooh.. and not a requirement)
a few slices of ham (the thin ones.. not the leg sized ones u have on christmas eve)
mixed veggies (u know.. those frozen packs u buy with corn, peas and carrots)
Soy Sauce or Salt
1 or 2 eggs
i know fried rice has always been cooked with left over rice.. but for me, whenever someone uses left over rice to cook fried rice, it's always too dry.. it leaves me feeling uncomfortable afterwards. that's why we're gonna use newly cooked rice.
first, saute the onion and garlic until the onions look like their loosing their color (first it's all whitey and stuff, then it goes semi transparent. it means they're cooked).
put in the ham, shrimps and veggies. fry until cooked.
add in the rice, toss it around from time to time, then add a pinch of salt or some soy sauce until u think it's enough.
clear the center are of the pan or wok or whatever it is you're using (make the bottom visible), add in a teaspoon of oil in that area and put the 2 eggs in. let the 2 eggs fry a bit and then mix it like crazy. serve at once cuz it'll loose it's moisty texture.
btw, i take my time when frying the onions, garlic.. etc.. but when the rice is put in, that's when i hurry. if u fry the rice for too long, it gets pretty hard so it's like u still used left over rice. so when the rice is in, u just want it to absorb the taste of all the other ingredients and still be moist.
usually takes my 10 mins to prepare these.
